Call it succulent, call it tender, but what whatever you do, don't call it just grilling.
"This is a much different thing than just grilling. This is barbequing. This is a 12-hour competition, and the time equals texture and flavor," said J.R. event organizer of the First Annual Blues & BBQ Weekend at Lake of the Ozarks.
Folks from all around Missouri and beyond are here not just to cook, but to display the art of barbeque.
While it is a friendly competition, it's intense...because, as some like Tim Scheer and his “Shake & Bake BBQ” team say "If you ain't first...you're last!"
"[We're] trying to whip up some secret recipes, and win the championship hopefully,” said Scheer
You know it's summer at the lake when you can hear and smell the meat sizzling on the grill.
"It's a showcase of Lake of the Ozarks. Bagnell Dam, this is the center of the universe. Lake of the Ozarks needs one of these events, and if you've never been to a sanctioned competition, you don't know what you're missing," said J.R.
The event goes to benefit local Boy Scouts Troop 21.
